Green Chia Pudding

Green Chia Pudding

4 servings

2 tablespoons maple syrup
1 teaspoon vanilla extract
1 bag baby spinach (5-6 oz)
2 cups coconut milk
2 cups almond milk
1 cup chia seeds
pinch of sea salt

Place the maple, spinach, vanilla, both milks & salt in a blender and blend until spinach is completely blended. Place the green liquid into a large bowl. Whisk in the chia seeds. Cover and let sit in the fridge until set. This is great to make the night before! For topping, we like to toast unsweetened coconut flakes and add blueberries.
