Cinnamon Brown Butter Apple Cake

2 cups baking mix
½ cup brown sugar
1 cup milk of choice
2 eggs
1 teaspoon vanilla extract
¼ cup butter, melted and browned
cup sour cream or plain yogurt
1 medium apple, quartered, cored and sliced into 1/4 inch slices

Preheat oven to 350º. Butter and dust with flour an 8 inch round baking pan. Or you can just spray it with nonstick baking spray. Place baking mix and sugar in a large bowl. Pour milk into a 2 cup measuring cup, add sour cream, vanilla, eggs and browned butter. Whisk to mix well. Pour wet ingredients into dry ingredients and mix gently until well combined. Do not over mix.

Pour cake mix into the baking pan and smooth the top. Divide apple slices into little stacks of 5-8 slices. Place the little stacks of apple slices decoratively on top of the batter.

Place cake in oven and bake for 20-25 minutes. I usually check at 20 minutes. If the middle still looks very soft then I give it another 10. If it looks only a little soft, I'll give it another 5. Then stick a toothpick in the center and if it comes out dry, its done!
